It all depends on the quality of the projector and who far the
projector is from the screen. It really can vary a lot.
In a more general sense:
VCD resolution is 352x240. Thats said to be equivalent to VHS quality
depending on the quality of the encoding. I'm sure people have done
presentations off of VHS tape before where ever you're going to be,
without too much complaint, and you've gone even more high-res than
that. I don't think you should have too much problem.
If you're really concerned, the best case scenario would require you
to find out the native resolution of that projector in advance and
re-encode your file for that resolution. There's no point in encoding
higher res than the projector's native res.
